Make This Slow Cooker Chicken-Orzo Soup ASAP

Chicken noodle soup is a classic “feel better” food for a reason — the warm, salty broth soothes your sore throat while the fortifying noodles, chicken, and veggies give you strength and energy. This chicken-orzo soup is no exception. Whip up a batch ASAP and freeze it for later — with winter on the horizon, you never know when you’ll need a comforting bowl of homemade soup.

The best part about this recipe is that the slow cooker does all the work for you. So even if you don’t plan ahead and freeze some of this, you can easily throw it together — even if you’re feeling under the weather.

This is also a perfect recipe to set up in the morning before you go to work, as it cooks all day and is basically ready by the time you get home from work. All you have to do is place chicken breasts, carrots, celery, chicken broth, water, garlic, dried basil, Italian seasoning, and bay leaves in the slow cooker and cook on low for eight hours.

When you’re ready to eat, remove the bay leaves; shred the chicken; add lemon juice, fresh parsley, the uncooked orzo, and salt, and pepper to the slow cooker; and stir every 10 minutes or so until the orzo is fully cooked. Then simply ladle into bowls and enjoy. It doesn’t get much easier than that!
